Originally from the region of Bordeaux, this grape variety has successfully been cultivated in Italy for some time. The adaptability of this vine to the territory makes the characteristics of the grape’s terroir particularly recognizable. In the eastern part of the Veneto region Cabernet Sauvignon makes smooth wines of good body, yet fresh and easy-drinking, especially if unoaked.

Intense ruby red. The bouquet is aromatic, pleasantly fresh and vinous with clear notes of ripe blue and black berry fruit. The varietal characteristics of Cabernet Sauvignon emerge on the palate: smooth with an elegant touch of tannins. Because it is unoaked, TSA Cabernet Sauvignon remains vibrant, fresh and easy-going, giving full expression to a territory that is particularly apt for producing wines of this caliber. Matches well with rich first courses, meat and game dishes, seasoned cheeses. Serve at a cellar temperature of 64-68°F.

AGING

After a partial malolactic is completed, the wine is transferred to cement tanks to rest for 3-4 months prior to bottling. No oak.

Vinification

After the harvest, grapes are de-stemmed and crushed. The must is left to soak in contact with the skins at temperatures of between 82° and 91°F for five to six days. Fermented in stainless steel tanks.
